The Issue with Gluten
Research shows that gluten sets the stage for increased gut permeability in everyone, regardless of gluten sensitivity status. Gliadin and its peptides increase levels of the enzyme zonulin in the gut. Zonulin has been shown to increase intestinal permeability by disassembling the tight junctions of the mucosal lining. Like all grains, gluten also contains a lectin that disrupts the tight junctions and promotes gut permeability. Common symptoms include aches, pains, headaches, fatigue, brain fog, depression, anxiety, and skin issues.
Gluten sensitivity exists on a spectrum. At one end is Celiac Disease, an autoimmune reaction to gluten where the intestines are damaged — a condition that only a small percentage of individuals have. A much greater number of people have what is called non-celiac gluten sensitivity (NCGS), which can cause intestinal damage and a cascade of other symptoms.
